In brief
A conical burr set has two parts. A cone-shaped inner burr spins inside a ring-shaped outer burr that stays still. Beans drop into the top and are crushed smaller and smaller as they spiral down through the narrowing gap.
Perfect Daily Grind notes that conical burrs are the usual choice in hand grinders and tend to be more affordable. The Baratza Encore, Comandante C40 MK4 and Fellow Opus all use them.
When you are choosing between a conical and a flat burr grinder, the shape is only part of the story. Burr design, build quality and how the grinder adjusts all shape what ends up in the cup.

How do conical burrs grind coffee?
Conical burrs crush beans progressively as they move downward, with gravity doing much of the feeding. Mahlkönig describes beans falling through the gap and getting crushed into smaller pieces as they spiral down.
Honest Coffee Guide notes that conical burrs usually have prominent "pre-breaker" teeth at the top. These crack whole beans into chunks before the finer cutting surfaces take over lower down.
Because gravity helps move coffee through, conical burrs do not need to spin as fast as flat burrs. Honest Coffee Guide says flat burrs, lacking that pronounced geometry, compensate by rotating faster.
Do conical burrs make coffee taste different?
The common claim is that conical burrs give more body and texture, but this is a generalization, not a rule. Honest Coffee Guide says conical burrs generally produce more fines, which add body to the cup.
Counter Culture Coffee says conical burrs produce more fines and fuller-bodied cups, a body it calls particularly ideal for espresso. Mahlkönig describes conical burrs as giving more body and roundness, with less separation between flavors.
The other side matters too. Honest Coffee Guide says the rule that conical burrs grind bimodal and flat burrs unimodal "doesn't always fit." Coffee ad Astra's data found conical burrs less uniform only on average, with a large overlap between individual flat and conical sets.
Are conical burrs good for pour-over?
Yes, conical burrs are widely used for pour-over and every other method. The Baratza Encore, which many people buy as a first filter grinder, uses conical burrs.
If you want the cleanest, most separated pour-over, some people prefer flat burrs. Given the overlap Coffee ad Astra found, a well-made conical set can outperform a mediocre flat set. Compare specific grinders rather than burr shapes, for example Baratza Encore vs Fellow Ode Gen 2.
What are the practical advantages of conical burrs?
The practical advantages are lower heat, lower noise, less retention and usually a lower price. Mahlkönig says conical burrs run cooler and quieter because of their lower speed.
Both Honest Coffee Guide and Mahlkönig say conical grinders tend to retain less coffee, because gravity helps clear the grounds. Honest Coffee Guide adds that flat burr grinders cost more on average and are harder to clean.
That combination is why conical burrs dominate hand grinders. Honest Coffee Guide cites a flat burr hand grinder, the OE Apex, as a rare exception.
| Conical burrs | Flat burrs | |
|---|---|---|
| Speed needed | Lower | Higher |
| Heat and noise | Lower | Higher |
| Retention | Usually lower | Usually higher |
| Typical price | Lower on average | Higher on average |
| Body vs clarity | More body (on average) | More clarity (on average) |
Which grinders use conical burrs?
Many of the grinders home brewers shortlist use conical burrs. A few examples, with the manufacturer's own description where we could check it:
- Baratza Encore and Virtuoso+. Baratza sells its M2 conical burr as compatible with both. See the Encore settings chart.
- Comandante C40 MK4. Comandante calls its Nitro Blade "the world's first heptagonal conical burr developed specifically for specialty coffee." See the C40 MK4 settings chart.
- Fellow Opus 2. Fellow lists 48 mm stainless steel conical burrs with stepless adjustment, covering espresso through cold brew.
If you are weighing a conical grinder against a flat one from the same maker, Fellow Ode Gen 2 vs Fellow Opus puts the two burr types side by side.
Does burr shape change where my dial should be?
No, burr shape does not tell you where to set the dial. Each grinder maps its numbers to burr gap in its own way, conical or flat.
To move a recipe from one grinder to another, use the grind converter. It works from each grinder's own settings curve rather than assuming any two dials match.
