The Classic Chemex Method
The standard specialty approach to a Chemex: a long bloom through that thick bonded filter, then two even pours for a clean, tea-like cup.

The method
- 0:00Rinse the filter thoroughly — thick paper, three folds toward the spout
- 0:00Bloom with twice the dose→ 60g
- 0:45Pour in slow circles to just past halfway→ 300g
- 2:30Pour the remainder, keeping the level steady→ 500g
- 4:15Drawdown complete around 4:00–4:30

Rinsing matters more here than on any other brewer — Chemex filters are heavy and will put paper into your cup if you skip it. Grind coarser than you would for a V60; the thick filter slows flow considerably and a fine grind will stall it.
