In brief

The Varia Evo hand grinder is a small, all-metal hand grinder built around a 38 mm stainless steel burr set. Whole Latte Love, Varia's North American distributor, describes the burr geometry as the same "Supernova" design used in Varia's VS3 electric grinder.

Independent reviews of this grinder are scarce. Most of what follows comes from two retailers, Whole Latte Love and Bean Bros, which repeat Varia's specification. Honest Coffee Guide has settings data only for the motorised Evo Hybrid, which shares the burr set. Treat performance statements as seller claims unless a source is named as an outside tester.

What it does well

  • Whole Latte Love lists 140 steps of grind adjustment at 10 microns each
  • Built from aluminum alloy and stainless steel to a 0.02 mm tolerance, per Whole Latte Love
  • The magnetic grounds bin fits a 58 mm portafilter, per Whole Latte Love
  • Comes with a shockproof carry case and cleaning brush, per Whole Latte Love

Where it falls short

  • Capacity is about 30 to 35 g of beans, per Bean Bros and Whole Latte Love
  • Whole Latte Love says it suits a budget buyer 'who doesn't mind grinding by hand'
  • Independent tests are scarce, so grind-uniformity claims come from sellers
  • Honest Coffee Guide's chart for the hybrid sibling stops around 830 microns, so French press is a stretch

What it does well

The adjustment is fine for a grinder this size. Whole Latte Love says the 38 mm burr has 140 steps at 10 microns each, so you can grind "fine enough for espresso, coarse enough for cold brew, and everything in between." Honest Coffee Guide's chart for the Evo Hybrid gives roughly 130 to 830 microns.

It is built to last. Whole Latte Love says it is constructed entirely from space-grade aluminum alloy and stainless steel, machined to a 0.02 mm tolerance. Bean Bros describes the operation as "no screws, no fumbling."

It travels well. It comes in a shockproof EVA case with a cleaning brush, per Whole Latte Love, and at 2.2 lb it is light for an all-metal grinder. Bean Bros gives the size as 195 mm tall and 64 mm wide, with a 174 mm crank handle.

It makes espresso transfers tidy. Whole Latte Love says the magnetically attached grounds bin fits a standard 58 mm portafilter, so you can grind into it and carry the grounds over.

Cleaning is simple, per Whole Latte Love: the grinding chamber and burrs are easy to reach, and a brush or a quick spritz of compressed air will do.

Where it falls short

Capacity is modest. Whole Latte Love says the chamber takes up to 35 g of beans, enough for up to two cups. Bean Bros gives 30 g. If you brew a full carafe, you will refill.

Hand grinding is slow work, and neither retailer gives a time per dose. Whole Latte Love pitches it to someone "on a budget who doesn't mind grinding by hand."

The coarse end is not its strength. Honest Coffee Guide's chart for the hybrid sibling stops around 830 microns, and BrewMark rates its coarse range at 2. Whole Latte Love's copy still says it reaches cold brew, so there is disagreement worth checking if French press is your main brew.

There are no independent tests of uniformity or retention in the sources here.

Who should buy it, and who shouldn't

Buy it if you brew espresso, AeroPress or small-batch pour-over and want a hand grinder you can pack. The 10-micron steps help with dialing in.

Skip it if you grind for several cups at once, brew French press daily, or want independent test data before you buy.

How it compares

The Varia Evo Hybrid adds a battery motor head to the same body and burrs. Whole Latte Love says the hybrid is made for precision, not speed. Pick the hand version if you will never use the motor.

The KINGrinder K6 is a hand grinder with an external dial, a different mechanism for the same job.

The VSSL Java is another compact travel hand grinder, designed to nest inside a brewer.

Owning it

Whole Latte Love includes a one-year parts-and-labor warranty, while Bean Bros lists two years of service in Europe. Check the term for your region.

Keep it dry and brush it clean. Our guide to cleaning a hand grinder covers the routine, and calibrating a grinder explains the zero point if you take the burrs apart.
