How pour over works

A paper filter traps oils and fines, which is why pour over tastes cleaner and more separated than immersion brewing. You taste acidity and individual flavours more clearly, and body less.

Because you control the pour, you control extraction directly: how fast water moves through the bed, how evenly the grounds are wetted, and how long the whole thing takes. That is more variables than any other method, which is both the appeal and the difficulty.

Total brew time is the single most useful diagnostic. If a recipe says three minutes and yours finishes in two, the grind is too coarse regardless of what the bag says.

When it tastes wrong

Sour or thin

Grind finer, or pour more slowly so the water spends longer in the bed.

Bitter or harsh

Grind coarser, or lower the water temperature by a few degrees.

The common mistake

Pouring too aggressively in the middle of the brew, which digs a channel through the bed and lets water escape without extracting evenly. Pour gently, in circles, and keep the bed flat.
