Lance Hedrick's Gongfu Hario Switch
A tea-inspired Switch method: three separate closed-valve immersions with fresh water each time, poured off the back of a spoon so the bed is never disturbed.

The method
- 0:00Close valve. Add 50 g of cooler water (about 167°F) to the empty Switch→ 50g
- 0:10Add the grounds on top and push them under with the back of a spoon
- 1:00Open the valve, drain fully, then close it again
- 2:00Pour 100 g at 194°F onto the back of a spoon above the bed→ 150g
- 3:00Open, drain, close. Repeat with a final 100 g→ 250g
- 5:00Open the valve and let it drain completely

The cool first immersion is the unusual part — it holds onto aromatics that a boiling bloom drives off. Hedrick grinds noticeably coarser than most pour-over recipes call for; if this tastes thin, resist the urge to go finer before you have tried a hotter second pour.
