How immersion works
Coffee and water sit together for a set time, then a valve opens and the brew drains through paper. You get the repeatability of full immersion and the cleanliness of a filtered cup.
Because the paper catches fines, immersion brewers tolerate a finer grind than a French press without turning muddy. That widens the useful range considerably.
Steep time is the main lever, and it is easy to change deliberately. Grind sets the ceiling on extraction; time gets you to it.
When it tastes wrong
Grind finer or steep longer.
Grind coarser or cut the steep by thirty seconds.
The common mistake
Opening the valve early because the timer says so, while the bed has not finished drawing down. Let it drain fully — the last of the drawdown is part of the brew.
