Sculptor 078S settings for each brew method

Start at the recommended setting, brew, then move within the range by taste. Sour or weak means go finer; bitter or harsh means go coarser.

MethodSettingRange
EspressoFine. Aim for a 25–30s shot and adjust from there.1.7≈ 330 µm0.5 – 3.3
Moka potFiner than filter, coarser than espresso. No tamping.4≈ 460 µm3.3 – 4.4
AeroPress (short steep)For 1–2 minute recipes. Go coarser for longer steeps.4.8≈ 500 µm4.4 – 5.3
Pour over — V60 / coneThe reference point for most published pour-over recipes.5.7≈ 550 µm5.4 – 6.7
SiphonMedium. Short contact over steady heat, so start here and taste.6.2≈ 580 µm5.6 – 7.3
Pour over — flat bottomKalita, Orea and similar. Slightly coarser than a cone.6.7≈ 610 µm5.9 – 7.8
Steep and release — Clever / SwitchSteep, then drain through a paper filter. If it drains slowly, go coarser.7.2≈ 640 µm6.2 – 8.3
Drip / batch brewAutomatic brewers. Coarser to suit the longer contact time.7.5≈ 650 µm6.7 – 8.8
CuppingMedium-coarse, for tasting side by side. Keep it the same across every bowl.7.8≈ 670 µm6.9 – 8.8
ChemexThe thick filter needs a coarser grind to avoid stalling.8.8≈ 720 µm7.8 – 10.1
French pressCoarse. Too fine here is the usual cause of a muddy cup.10.9≈ 840 µm9.9 – 11.7
Cold brewCoarsest setting you have. 12–18 hours of contact.12.6≈ 940 µm11.7 – 13.8

≈ µm is the particle size, approximate, after Honest Coffee Guide’s scale for the Sculptor 078S. It is not the maker’s microns per click, which measure how far the burrs move.

How much room you have to adjust

Espresso → filter5.4numbers of adjustment across the fine half of the dial
Filter → coarse7.9numbers covering filter through to cold brew
Curvelinearflat burrs, interpolated linearly

That is the resolution you actually have to work with on the Sculptor 078S. Where the number is small, a single step moves the cup more than you would expect — so change one at a time and taste before moving again.

Convert a grind setting to the Sculptor 078S

If a recipe quotes a setting for a different grinder, this maps it onto the Sculptor 078S’s dial using the same curve the chart above is built from.

How these numbers were worked out

Every grinder gets mapped onto a shared 0–100 grind index, where 0 is espresso-fine and 100 is the coarsest useful setting. Five reference points on the Sculptor 078S are placed on that scale — espresso, moka, filter, French press and coarse — and the settings in between are interpolated.

The Sculptor 078S joined the catalog in October 2026. Its reference points were worked out rather than read off a maker’s chart: Honest Coffee Guide places every setting on this grinder on one scale of particle size, and each point sits where that scale reaches the size the same method lands on across the grinders we have checked. 078S uses espresso-capable flat burrs and a stepless dial; the 078 has turbo brew burrs and a stepped 36-setting dial. That makes them a starting point rather than a specification, and they are marked unverified until a manufacturer’s chart confirms them. Sources: Honest Coffee Guide, timemore.com.

The Sculptor 078S’s dial is interpolated linearly between those reference points, which is the right model for its burr geometry.

The result is that “medium-fine” resolves to a real number on this grinder rather than a vague instruction. It is a starting point, not a guarantee — burr wear, bean density and roast level all move the target, which is why every row above gives a range as well as a number.
